Chicken Mole
1 14-oz can tomato
8 skinned and boned chicken thighs
1 chipotle chile or to taste
1 tsp cumin
2 cloves garlic, minced
1 tbsp sugar
1 green bell pepper, chopped fine
2 tsp chili powder
3 tbsp cocoa
1 green chili pepper, chopped
1 onion, chopped fine
1/3 cup water
Place all ingredients except cocoa and sugar in a large pot. Cover and simmer until chicken is very tender (about an hour). Remove chicken from pot. Add cocoa and sugar. Simmer sauce until thick. Return chicken to sauce and heat 5 to 10 minutes to blend flavors. Serve over rice.

I really like this book. It lists chocolatiers and enhanced chocolate.
It even briefly mentions an enhanced brand of chocolate that I sampled at a women's show.
It has some good advice. but I'm a consumer not an expert.I reccommend this to any chocolaholic (sp)
